Peach Cobbler
1 stick butter (melted)
1 1/4 cups plus 2 tablespoons sugar
1 cup self-rising flour
1 cup milk (I even used skim)
2 cups peaches (fresh or frozen)(or use blueberries, blackberries, rasberries...)
- Preheat the oven to 350.
- Grease a 3-quart baking dish with butter (I used a pie pan)
- Melt butter in a microwave-safe dish (30 to 45 seconds)
- In a medium bowl, whisk 1 cup of sugar with the flour and milk
- Whisk in the melted butter
- Peel and slice the peaches (if you use frozen... just pat them dry)
- Pour the batter in the baking dish
- Place the peach slices evenly over the top of the batter
- Sprinkle 1/4 cup sugar over the peaches
- Bake for 1 hour (or until golden brown and bubbly)
- When 10 minutes of cooking time remain, sprinkle 2 tablespoons sugar over the top
Top with some ice cream and eat up! How easy is that? Clay thinks that this cobbler takes hours to make...
