draped blazer

I've been loving the draped blazer trend.  It's the perfect piece to put over an outfit if you're going out at night and it's a little chilly.  I found mine at The Limited.  I had a chance to wear it last weekend when I was in Greenwood, MS for a baby shower.  I love it.

I didn't really get a good picture of the entire outfit, but I wore it over a j. crew sequined tank and tangerine jbrand 811 jeans.  I caved and bought them...

cheese ravioli lasagna


Cheese Ravioli Lasagna


This recipe is, hands down, my favorite.  It is easy to make, freezes beautifully, and tastes delicious.  A neighbor gave me this recipe a few years ago, and it's a family favorite.  Clay likes it better than Pioneer Woman's lasagna (which takes hours to make).  This recipe probably takes 15 minutes to make and 30 minutes to bake. 


Cheese Ravioli Lasagna


1 24 oz jar of spaghetti sauce (I like Classico "Spicy Tomato & Basil")
16 oz ground beef (I use ground turkey)
Cheese Ravioli
Italian Blend Cheese
Garlic
Onion
Salt/Pepper

Brown your ground beef (or turkey) with chopped up garlic and onion. 

Add your sauce to the meat and stir.

In a 13 x 9 pan, pour half the sauce on the bottom.

Cover with frozen cheese ravioli or tortellini.


Add the rest of the sauce on top of ravioli.


Cover with Italian Blend Cheese.


Bake at 350 degrees F until bubbly and hot (30 minutes).

ENJOY!

This recipe can easily be doubled.  You can make a double layer of cheese ravioli and sauce.  I like to serve with garlic bread and a salad!

If you're going to freeze this, don't bake it.  Just cover it with tin foil and put it in the freezer.  The day you want to serve, get it out of the freezer and just let it sit out all day.  It will be ready to bake at dinner time!

spring candle

Archipelago "Grass" Candle

I love a good candle.  Archipelago's "Grass" candle might be my favorite for Spring.  My Mom got us this candle for Valentine's Day and I am in love.  It makes our whole house smell so good.  It's a little pricey (the good candles always are).  I haven't been able to find it in any stores in Evansville, but I did see it a few weeks ago at Walker's Bluff in Carterville, IL. This candle is a great go-to gift (get one for yourself too)!

We love our TV shows.  Here are some shows that you definitely need to check out.
Game of Thrones

Game of Thrones just started its 2nd season.  We rented the first season and watched it back-to-back.  We literally counted down the days until it started again.  The plot is based off the books by George R.R. Martin.  If you like Lord of the Rings, Hunger Games, Harry Potter...you will love this. Sunday Nights 9/8C on HBO.

GCB
My Dad has been recording and watching GCB.  He told us that it was hilarious, and we're totally hooked.  Kristen Chenoweth is HILARIOUS!  These girls are riots.  Sunday Nights at 10/9C on ABC.

cobbler

This cobbler recipe is so good and EASY!  It's The Pioneer Woman's Recipe (go figure...love her).  I made the cobbler with peaches, but you can make it with blueberries, blackberries, rasberries etc...


Peach Cobbler

1 stick butter (melted)
1 1/4 cups plus 2 tablespoons sugar
1 cup self-rising flour
1 cup milk (I even used skim)
2 cups peaches (fresh or frozen)(or use blueberries, blackberries, rasberries...)

  • Preheat the oven to 350. 
  • Grease a 3-quart baking dish with butter (I used a pie pan)
  • Melt butter in a microwave-safe dish (30 to 45 seconds)
  • In a medium bowl, whisk 1 cup of sugar with the flour and milk
  • Whisk in the melted butter
  • Peel and slice the peaches (if you use frozen... just pat them dry)
  • Pour the batter in the baking dish
  • Place the peach slices evenly over the top of the batter
  • Sprinkle 1/4 cup sugar over the peaches
  • Bake for 1 hour (or until golden brown and bubbly)
  • When 10 minutes of cooking time remain, sprinkle 2 tablespoons sugar over the top

Top with some ice cream and eat up!  How easy is that?  Clay thinks that this cobbler takes hours to make...

I finally had a chance to do Ellen's dance dare.  It really is so much fun.  We were all home for Easter and I decided to dance behind Dad in our bar.  He literally had no idea, and still didn't have an idea until Taylor showed him the video.  I didn't have much room!

pico de gallo


I made The Pioneer Woman's pico de gallo last week and it was AMAZING!  The recipe was in my cookbook, but she also has it posted on her blog.  Her tip for successful pico de gallo is to have equal amounts of ingredients (onions, tomatoes, and cilantro)...the jalapeno peppers do not have to be equal.  Just add as little or as much as you want.  I was a little conservative with it because Clay doesn't like spicy things.


pico de gallo
yellow or red onions
roma tomatoes (slightly underripe is fine)
cilantro
jalapenos
lime
salt

dice up the onions, tomatoes, and cilantro (equal parts).
slice 1 or 2 jalapenos in half (scrape out the seeds with a spoon.  leave the seeds in if you like a little spice. dice the jalapeno and add it to the other ingredients.  dump all four ingredients into a bowl.  slice a lime in half and squeeze the juice from the lime into the bowl.  sprinkle with salt and stir together.  taste and adjust seasonings.  *be sure to taste it with chips

I had a chance to wear my new pair of dv by dolce vita sandals over the weekend.  I'm obsessed!  They are so comfortable, and instantly glam up any outfit.

bacon and boursin stuffed chicken

The boursin and bacon stuffed chicken I found on So Delushious was a success!  It was so good and tasted gourmet.   

I fell in love with boursin cheese at a dinner party two years ago.  I literally ate the whole cheese plate.  So I really couldn't contain my excitement when I found this recipe.  You can find Boursin cheese at most grocery stores.  Wal-mart even has it!  You can find it in the gourmet cheese section of the grocery store (not by the shredded cheeses).  Boursin is usually located by the laughing cow or babybel cheese.

Ingredients:
2 large boneless, skinless chicken breasts
1 pckg. Boursin cheese (Note: I used the herb and garlic flavor. You can also use a packed herb goat cheese.)
4 slices thickly cut bacon
4 slices prosciutto
1/2 lemon, juiced
Salt and pepper
1 c. chicken stock
10-12 cherry tomatoes


Directions:
Preheat oven to 375 degrees. Lightly oil the bottom of a deep oven pan, like a rectangular or square cake pan. Place one piece of the chicken breast on top of a piece of Saran wrap. Cover with another piece and gently beat it with the rounded end of a metal ladle or just a meat tenderizer.  Do this until the chicken breast is large and fairly thin.  Generously spread the boursin cheese over the chicken breast.  Lay 2 slices of bacon on the chicken breast.  Roll from the short side in. Wrap two pieces of prosciutto around each chicken roll, making sure not to overlap too much. Place into lightly greased pan. Season with lemon, salt and pepper.  Pour chicken stock into bottom of the pan, toss in cherry tomatoes. Bake on middle rack for 55 minutes.  Make sure to spoon juice onto tops of chicken every 10-15 minutes or so. Slice diagonally and serve with sautĂ©ed veggies.

Chrissy Teigen is a Sports Illustrated model and John Legend's fiancĂ©.  She has a twitter account, and her tweets are highly entertaining.  Well, a friend told me about her blog and it is even more entertaining!  She LOVES food AND The Pioneer Woman.  I mean, what's not to love?  Haha.
